Yesterday I had a serious case of the blahs. The week was already full, the teenager had been running me ragged, ("But mom, it's only $60.00! You're so unsupportive!") And I hit a wall, feeling depressed and depleted. Suddenly I had a thought...you are what you eat. And I needed to feel alive, I needed to eat something that would make me feel clean and light again. So I went to the store and I collected the ingredients for a fabulous salad, and it totally DID THE TRICK! I put on some mellow music, opened the kitchen windows to the sunshine and made this absolutely delicous, throw-together salad that felt like pure life, flowing into my veins with every happy, bursting-with-flavor-mouthfull. Thought I'd share it with you all, in case you need a delicious, heart-friendly, stress-reducing pick-me-up too. xoxoxo Diane
Ingredients:
spring mix of salad greens (with herbs!)
romaine lettuce torn into pieces
3 organic strawberries
half an avocado, cubed
1/2 package of baked tofu, cubed
2 T roasted sunflower seeds
2 T shredded carrot
1 T Annie's lite honey mustard dressing
toss, and enjoy every crunchy, fresh bite!
