I just made this pretty pink party cake and it's so delicious I have to share! I spent quite a bit of time online looking for the right recipe - I wanted to find an almond cake batter, not made with almond meal or flour, but flavored with almond, and some kind of white chocolate icing. I would have to veganize whatever recipe I found, but I didn't think that would be too hard. I soon found that it might be harder than I had anticipated: every almond cake recipe called for at least 5 egg whites, and sometimes 8! You can get away with substituting flax seed for eggs when it's no more than 3 or 4, but 8?
I decided to take a risk on a new discovery that is taking the vegan world by storm: aquafaba. Aquafaba is none other than the water that is in the can with your beans. That's right, the stuff you've been pouring down the drain all these years is the perfect egg-replacer. It's a protein, just like the egg! Chickpeas or Garbanzao beans yield the lightest in color that works well in vanilla-y recipes, but you can also use the water from any beans, or even from a packet of tofu! It's like magic. 3 T aquafaba = 1 egg. You can just pour it in straight from the can. You can also, for a different meal altogether, make AMAZING MERINGUE from aquafaba. Yep, EXACTLY like an egg white meringue. You just whip it, and that bean water transforms into delicious, delightful, white peaked-meringue. Truly marvelous stuff!
And it didn't let me down here, either. The original, non-vegan recipe was only for a 6" cake, so I had to double it to make my three-layered, 9" cake. This meant the original 4 egg whites it called for had become 8. Which meant 24 Tablespoons of aquafaba! I wasn't sure if this would work, but it sure did. The cake came out so moist and delicious, I may have never had a better birthday cake. :) note: doubling the recipe also meant that I needed to use 4 whole teaspoons of almond extract. The flavor of the cake is
INCREDIBLE.
The icing recipe came from a different site, and it's delicious too. A white chocolate frosting, easy to veganized with vegan white chocolate, earth balance "butter", and almond milk. Best frosting ever!
Plus, the cake is pink. Three pink layers with white icing and sprinkles. A party cake if I ever saw one. Bon appetite! :) XOXOXO DR
